OOLONG CHERRY BREAKFAST TARTS

I’m sure all of us grew up eating Pop-tarts, they were always such a special treat and I will always have a soft place in my heart for them. I began making my own shortly after we opened our coffee and tea shop. A local bakery we partnered with introduced me to them and they blew my mind! I don’t know why it took me so long to realize that they can easily be made at home and the flavors can be truly endless. Today I’m going to share one of my favorites with you, I call them oolong cherry breakfast tarts and oh, man, they’re AMAZING!

The key to getting the tea flavor infused into these pastries is to grind the tea leaves as fine as possible. I used a coffee grinder and it worked perfectly. The oolong tea adds such an interesting nuance to the tarts, it seems so familiar but so exotic at the same time. The next time you are hosting breakfast/brunch, definitely keep this recipe on your list to wow your guests.

OOLONG CHERRY BREAKFAST TARTS

Breakfast Tarts Ingredients

  • 2 pie crusts
  • 1/2 cups of cherry jam
  • 1 tablespoons of oolong (or one tea bag)
  • 1 tablespoons of corn starch
  • 1 egg

Royal Icing Ingredients (optional)

  • 1 cup of confectioners’ sugar
  • 1 1/4 tablespoons of cold water
  • 3/4 tablespoons of meringue powder
  • 1/4 teaspoon of vanilla extract
  • Food coloring gel (optional)

Breakfast Tarts Directions

  1. Preheat oven to 375 degrees
  2. In a medium mixing bowl, combine the cherry jam, tea and cornstarch. Set aside
  3. Whisk the egg into a separate bowl and set aside. This is for the egg wash
  4. On a floured surface, roll out the pie crusts to about a 12-inch circle. Cut out 4 equal rectangles, approximately 4″x3″.
  5. Scoop about 2-3 tablespoons of the jam and tea mixture into the middle of two of the rectangles
  6. Brush the egg wash onto the edges of each rectangle then place the other rectangles on top
  7. Using a fork, gently score the edges together
  8. Poke a few holes on the top, then brush the top with the egg wash
  9. Using a parchment-lined baking sheet, bake the breakfast tarts for about 20 minutes, or until they turn golden brown
  10. Remove them from the oven and allow them to cool on a cooling rack

Royal Icing Directions

  1. Beat all of the ingredients together until peaks form, approximately 10 minutes
  2. Gently pour the icing onto the breakfast tarts to taste
  3. Enjoy!
