IRISH COFFEE BROWNIES RECIPE

St. Patrick’s Day is this Thursday and I love any excuse to celebrate themed holidays. If you’re hosting a party this year, I’ve got a delicious brownie recipe for you. These brownies are made with coffee and Irish cream and they are so good!

These brownies are moist in the center with a hard, candy-like shell that is just sinful. There is a hint of coffee and Irish cream flavor in both the brownies and ganache, making it absolutely perfect for your St. Patrick’s Day celebrations.

To begin, combine the dry ingredients: flour, cocoa, coffee, baking soda and salt until combined. Set aside.

Using a double boiler, slowly melt chocolate chips until they are completely melted. Allow the melted chocolate to cool for a couple minutes.

After the chocolate has cooled a bit, pour it into a separate large mixing bowl. Add the eggs and whisk until combined.

Combine the sugar, vanilla and Bailey’s Irish cream with the melted chocolate and mix well. Add the reserved dry ingredients to the wet ingredients and fold until combined.

Line a 8″x8″ baking baking dish with parchment paper and pour the batter into the dish. Bake for 18-20 minutes. After 18 minutes, stick a toothpick in the center and if the toothpick comes out clean then the brownies are ready! If the toothpick isn’t clean, keep baking until it is.

After the coffee brownies are done baking, remove them from the oven and set aside to allow the brownies to cool a bit.

Ganache Preparation

To make the coffee and Irish cream ganache, use a double boiler to melt the chocolate and add Irish cream, heavy cream and butter, mix well. Pour the ganache over the brownies and you’re done!

Good luck resisting eating all of them!

Irish Coffee Brownies Recipe

  • 1 cup of all purpose flour
  • 1/2 cup of unsweetened cocoa powder
  • 1/2 teaspoon of finely ground coffee
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/3 cup of semi-sweet chocolate chips
  • 1/4 cup of butter
  • 2 eggs
  • 1 cup of sugar
  • 1/3 cup of Bailey’s Irish Cream
  • 1 teaspoon of vanilla extract

Ganache Recipe (optional)

  • 1 cup of semi-sweet chocolate chips
  • 1/3 cup of heavy cream
  • 1/3 cup of Bailey’s Irish Cream
  • 1 tablespoon of butter

Directions

  1. Preheat oven to 350 degrees.
  2. Using an 8″x8″ baking pan, line with parchment paper and lightly spray with non-stick oil.
  3. In a medium bowl, mix flour, cocoa, coffee, baking soda and salt until combined. Set aside.
  4. Using a double boiler, slowly melt the chocolate chips and butter. Set aside.
  5. After the chocolate has cooled a little, move to a large mixing bowl and add eggs, whisk until combined.
  6. Add sugar, vanilla, and Bailey’s Irish cream, mix well.
  7. Add the flour and cocoa mix and fold until combined.
  8. Pour batter into parchment lined pan and bake 18-20 minutes. Test with a toothpick to ensure the middle is baked properly.
  9. Let cool and add ganache if desired.

Ganache Directions

  1. Using a small saucepan and double boiler, melt the chocolate chips on medium-low heat.
  2. Add Irish cream, heavy cream and butter, mix well.
  3. Pour the ganache over the cooled brownies.
