Did you ever make rock candy as a kid? I can barely remember doing it, but I remember it felt so exciting to watch something grow right in front of my eyes. I wanted to try to incorporate tea into the recipe, allowing the sugar crystals to pick up the flavors of the tea.
To begin, you’ll need skewers, clean and dry jars, clothes pins, tea, granulated sugar and food coloring. For this recipe I’m using green tea, but any tea can be used. Food coloring allows us to “dye” the sugar crystals, have fun and experiment with your favorite colors!
GREEN TEA ROCK CANDY RECIPE
- 2 cups of freshly brewed tea
- 6 cups granulated sugar
- 1-2 drops of food coloring
- Pour the sugar on a large plate. Wet each wooden skewer under water and roll it in the sugar. Set them aside.
- Place the water into a medium saucepan and bring it to a boil. Slowly add the sugar, one cup at a time. Be sure to stir constantly until all of the sugar has dissolved. Turn off the burner and remove the saucepan. Allow the liquid to cool to room temperature (about 30 minutes).
- Separate the sugar syrup according to the colors you’ll be using. For example, if you’re using two different colors, pour the mixture into two separate jars.
- Add the food coloring accordingly. Stir the mixture well for even color distribution.
- Place the sugared sticks into each jar, allowing about an 1″ gap from the bottom. To achieve this, use clothes pins to keep them elevated.
- Place the jars in a cool place outside of direct sunlight. Cover the top with plastic wrap.
- The sugar crystals will begin to form within a couple of hours. It may take a day or two to achieve the desired size.
- There will be a crystal layer at the top, break that with a butterknife before removing the candy sticks.
- Transfer the candy to clean, dry jars and use the clothes pins to keep them suspended to allow them to dry (this should take an hour or two). Wrap the sticks in plastic until you’re ready to eat them!
