COFFEE GLAZED SWEET POTATOES

I’m generally not a sweet potato fan. Well, except for sweet potato tacos, I love me some sweet potato tacos! I know they have great nutritional value so I always try to incorporate them into my diet whenever possible. I’ve been trying to come up with recipes that make me more excited to eat them. I came up with a really great one, it’s coffee glazed sweet potatoes and I’d love to share it with you!

To begin, start with two peeled sweet potatoes. Cut them into slices and place them into a heat-safe baking pan. Preheat the oven to 350 degrees.

Cut up the butter into cubes and place them on top of the sweet potatoes. Add a dash of garlic salt and freshly ground pepper.

In a medium mixing bowl, combine one cup of freshly brewed coffee and 1/4 cup of brown sugar. Mix well with a fork. Set aside.

Slowly pour the coffee glaze over the sweet potatoes, make sure to get in between all of the cracks and crevices!

Cover the pan with foil and place into oven for 30 minutes.

While the sweet potatoes are in the oven, prepare the coffee seasoning salt. Using a small mixing bowl, add the flake salt, smoked paprika and ground coffee beans.

Mix until blended.

After 30 minutes, remove the foil and top off with the coffee seasoning salt. Place the sweet potatoes back into the oven for another 15-20 minutes, or until the the potatoes begin to brown.

One they are done baking, remove the sweet potatoes from oven and allow them to cool before serving.

Ingredients

  • 2 sweet potatoes, peeled
  • 1 cup of freshly brewed coffee
  • 1/4 cup of brown sugar
  • 1/4 cup of butter
  • A pinch of garlic salt
  • Freshly ground pepper

Coffee Seasoning Salt Recipe (optional)

  • 1/2 cup of flake salt
  • 1/2 cup of smoked paprika
  • 1/2 cup of finely ground coffee
